pita breads
72 Soy City Falafel Patties
finely cut or shredded lettuce
chopped or sliced tomatoes
chopped or sliced cucumbers
traditional tahini sauce
Tabasco or other hot sauce (optional)
Directions
Cook
falafel patties according to directions. (Note:
falafels can also be prepared in a commercial
steamer by steaming for 10 - 20 minutes in a single
layer in shallow covered pans.) However prepared,
falafels can be kept in a steam table for up to
20 minutes without adverse effects.
Assembly:
Warm
pitas (if practical) and slit open along one edge
(1/3 to 1/2 way around). Open pita bread into
a pocket.
Fill 1/3 full with the prepared salad ingredients
and add 3 of the cooked falafels. Fill the rest
of the pita with
the prepared salad ingredients and add sauces
as desired.
Traditional
Tahini Sauce (serves 24)
TRADITIONAL:
1
1/2 cups tahini (sesame seed butter)
4 cloves garlic, pressed
2 tbsp. dried parsley
1 tbsp. Tabasco sauce
1 tbsp. paprika
2 tsp. ground cumin
2 tsp. salt
2 - 3 cups water
1 1/2 cups yogurt or eggless mayonnaise
1/2 cup lemon juice
SIMPLE:
1
1/2 cups tahini (sesame seed butter)
1 1/2 cups water
1/2 tsp. salt
3 tbsp. lemon juice
2 cloves garlic, pressed
1 tbsp. tamari or soy sauce
Place
all ingredients in a food processor or blender.
Blend until smooth.
If you use the first recipe, use eggless mayonnaise
instead of yogurt for
a dairy-free sauce.
