Ingredients:

pizza crust
25 mL 2 tbsp. olive oil
175 mL 3/4 cup chopped onion
1 garlic clove, chopped
1 red pepper, chopped
7 mL 1 1/2 tsp. dried basil
500 mL 2 cups chopped fresh tomatoes
250 g 8 oz. tofu, frozen, thawed and shredded
125 mL 1/2 cup chopped Italian parsley
50 mL 1/4 cup coarsely chopped black olives
500 mL 2 cups grated feta cheese
Directions:
Preheat
oven to 450° F (230° C).
Sauté onion and garlic in olive oil until onions
are transparent.
Add the basil and red pepper and sauté 5 min.
Add tofu and cook 3-4 minutes.
Add parsley, tomatoes and olives and remove from
heat.
Spread on crust and sprinkle with feta.
Bake for 6-8 minutes or until crust is golden
and cheese is melted.

Dough - Or Use Frozen Ready to Use

package dry yeast
250 ml 1 cup lukewarm water
500 mL 2 cups unbleached flour
15 mL 1 tbsp. olive oil
2 mL 1/2 tsp. salt
Dissolve
the yeast in the water.
Combine the other ingredients in a mixing bowl
and add dissolved yeast.
Mix into a ball and turn out onto a flour board.
Knead until dough is elastic.
Cover with plastic wrap and let rest for 2-3 minutes.
Roll as thin as possible and place on a lightly
oiled 17"-18" (41-45 cm) pizza pan.
